• 1/2 cup cold mashed potatoes
  • 1/4 teaspoon vanilla
  • 1 lb. powdered sugar
  • 1 cup peanut butter
 Mix together the potatoes and vanilla.  Beat in the powdered sugar until a stiff dough forms.

Toll out on a powdered sugar coated surface to a rectangle that is about 1/4” thick.  Spread with peanut butter, leaving a 1” margin.

Roll up jelly roll style.  Cut into slices.
