• 1 1/2 cups chopped onion

  • 1 teaspoon minced fresh garlic

  • 3 tablespoons olive oil

  • 2 pounds ground chuck

  • 2 eggs

  • 2 tablespoons olive oil

  • 2 eggs

  • 2 tablespoons milk

  • 1 cup breadcrumbs (fresh or Panko)

  • 1/4 cup chopped flat-leaf parsley

  • 1 teaspoon kosher salt

  • 1/4 teaspoon cayenne pepper

  • 1 teaspoon fresh lemon zest

Glaze:

  • 1/2 cup catsup

  • 2 tablespoons brown sugar

  • 1 tablespoon Dijon mustard

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon hot pepper sauce (or to taste)

 

Sauté the onion and garlic in the olive oil for about 3 minutes.  Remove from heat and cool.

With a fork, gently toss the onion mixture into the ground beef.

Whisk together the egg and milk

Stir in the breadcrumbs and toss into the meat mixture.

Add the parsley, salt, pepper and lemon zest.

Gently press the mixture into a loaf pan that has been sprayed with non-stick spray to shape the loaf.  Invert onto a greased (or foil lined) shallow baking pan.

Mix together the glaze ingredients and spread evenly over the loaf.

Bake in a preheated 350 º F. oven for 1 hour to 1 hour and 15 minutes or until done through.  (thermometer will measure 175 to 180 º F.)

Allow to sit for 5 to 10 minutes before slicing.
