·         4 cups seeded watermelon, cut into small cubes

·         1/2 cup chopped Vidalia onion

·         1 jalapeño pepper, minced

·         2 tablespoons chopped cilantro

·         1 tablespoon fresh lime juice

·         1/2 teaspoon sugar

·         1/2 teaspoon kosher salt

 

Toss together. Cover and chill until serving time.

Makes about 4 cups.
