• 1/4 cup vegetable oil
  • 1 cup chopped onion
  • 1 tablespoon finely minced garlic
  • 1 tablespoon ancho chile powder
  • 2 tablespoons smoked paprika
  • 1 tablespoon Dijon mustard
  • 1 tablespoon hot pepper sauce (to taste)
  • 1/2 cup cider vinegar
  • 1/4 cup Worcestershire sauce
  • 1/2 cup dark brown sugar
  • 2 cups catsup
  • 1 teaspoon kosher salt, or to taste

 

Heat the oil in a heavy pan.  Sauté the onion and garlic, stirring , for 5 minutes.  Stir in the chile powder and paprika and cook a minute or two more.Stir in the remaining ingredients, mixing well.Bring to a boil.  Simmer, uncovered, for 20 minutes.Serve warm.
