·         1 3/4 cup hearty red wine (Zinfandel or Cabernet Sauvignon)
·         1 cup sugar
·         1 cup light brown sugar
·         6 whole cloves
·         6 whole allspice
·         2 cinnamon sticks
·         12 ounces fresh cranberries
·         1 tablespoon orange zest

Combine wine, sugars and spices in a medium non-reactive saucepan.  Bring to a boil, stirring until sugar dissolved.  Reduce heat and simmer until liquid is reduced to 1 3/4 cups.  Strain  into a large saucepan.  Add the cranberries and orange zest and cook for 6 minutes over medium heat.  Cool.  Transfer to a dish, cover and chill.  May be made 1 week ahead.
