Veggie Burger

  •   1/4 cup bulgar wheat
  •   1 cup boiling water
  •   1 small onion, chopped
  •   3 cloves garlic, minced
  •   15 sprigs fresh parsley
  •   2 eggs
  •   3 cups cooked garbanzo beans
  •   3 tablespoons yogurt
  •   1 teaspoon salt
  •   1 teaspoon black pepper
  •   1/2 teaspoon cayenne pepper, or to taste
  •   1/2 teaspoon cumin
  •   1/2 cup bread crumbs
  •   1 tablespoon oil, or as needed for the skillet

Pour the water over the bulgar and allow to sit for 30 minutes. Drain off any water that is not absorbed by the grain.

Put all remaining ingredients, except bread crumbs and oil in the food processor and puree into a paste.

Form into flat patties and roll in bread crumbs. Chill for 1 hour.

Sauté in the hot oil….about 7 minutes on first side and 3 to 4 minutes on second side.
