· 1 pound fresh spinach, washed, dried, stemmed and chilled
· 2 large navel oranges, peeled* and thinly sliced
· 1/2 cup lightly toasted sliced natural almonds or lightly toasted pine nuts
Just before serving, toss the spinach with just enough dressing to coat.
Garnish with orange slices and sprinkle with the nuts.
Makes 8 small side salads or 4 large salads.
*Peel the oranges with a sharp, flexible bladed knife. Cut through both peel and pith to reveal the orange pulp.
Celery Seed Dressing
· 1/2 cup peanut oil
· 1 teaspoon salt, or to taste
· 1 /4 cup cider vinegar
· 1 /4 cup honey
· 1 teaspoon celery seed
Combine all ingredients in the blender, or food processor and blend until smooth. Makes 1 cup.
