Lent recipes - Breaded Fish Fillets


2 pounds mild fish fillets (such as farm raised catfish)1/2 cup mayonnaise1/2 cup sour cream2 teaspoons flour1 1/2 teaspoons lemon juice1 tablespoon minced onion1/8 teaspoon cayenne1/2 cup shredded cheddar

Pat fish dry.  Place in buttered baking dish.

Mix together all ingredients, except cheese, and spoon over top of fish.  

Bake, uncovered in a 425 º F. oven for 20 to 25 minutes.

Remove and sprinkle with cheese.  Return to oven for 2 minutes or until cheese is melted.
