2 slabs baby back ribs
1 tablespoon smoked paprika (sweet)1 tablespoon kosher salt1 tablespoon brown sugar1/2 teaspoon cayenne pepper1/2 teaspoon black pepper1 tablespoon onion powder1 tablespoon garlic powder
Mix together all of the ingredients. Lightly brush the ribs on both sides with vegetable oil. Rub both sides of the ribs with the rub. Place in a shallow dish and cover with plastic wrap. Chill for at least 2 hours or as long as overnight.
To finish:Brown both sides of the ribs on a hot grill, turning once, just until golden brown.Wrap each separately in 2 large sheets of heavy duty foil, sealing the edges securely.Return to indirect heat on the grill with low to medium heat. (Grill should be 300 to 325 º F.) Cook for 2 1/2 hours or until meat is fork tender.Meanwhile, make the barbecue sauce. When the ribs are ready to serve, put them on a platter and drizzle with sauce. Pass the remaining warm sauce.
