Southwest Chicken Salad

  • 20-ounce package Tyson Diced Chicken Breasts

  • 1 cup chopped celery

  • 1 cup mayonnaise

  • 1 cup tomato salsa

  • ¼ cup chopped fresh cilantro, (optional) 

  • Shredded lettuce

Thaw the chicken in the microwave according to package directions.


Place in a mixing bowl and toss in the celery.


Stir together the mayonnaise, salsa and cilantro and toss into the chicken.


Cover and chill until ready to serve.


Serve on a bed of shredded iceberg lettuce.


Serves 6.
