Lemon Lean Meatloaf

1 1/2 cups chopped onion1 large clove garlic, finely chopped3 tablespoons extra-virgin olive oil2 pounds very lean ground beef1 egg plus 1 egg white2 tablespoons milkcup fresh breadcrumbs1/4 cup chopped parsley1 teaspoon kosher salt1/4 teaspoon freshly ground black pepper1 teaspoon finely chopped lemon zest The Glaze

1/2 cup catsup1 tablespoons dark brown sugar1 tablespoon Dijon mustard1 tablespoon fresh lemon juice1/2 teaspoon hot pepper sauce Sauté the onion and garlic in the olive oil for about 3 minutes, stirring.  Remove from the heat and cool.With a fork, toss the onion mixture into the beef. Whisk together the egg, egg white and milk.  Stir in the breadcrumbs and toss into the meat mixture along with the parsley, salt, pepper and lemon zest. Gently press the mixture into a non-stick loaf pan. Invert onto a shallow baking pan.  (foil lined for easy cleanup)Stir together the glaze ingredients and pour over the top.Bake in a 350 º F. oven for 1 hour to 1 hour and 15 minutes or until done through.Allow to sit for a few minutes before slicing.Serves 8.
