Lemon Lean Meatloaf

  • 1 1/2 cups chopped onion
  • 1 large clove garlic, finely chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 pounds very lean ground beef
  • 1 egg plus 1 egg white
  • 2 tablespoons milk
  • cup fresh breadcrumbs
  • 1/4 cup chopped parsley
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon finely chopped lemon zest

 The Glaze

  • 1/2 cup catsup
  • 1 tablespoons dark brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon hot pepper sauce

 Sauté the onion and garlic in the olive oil for about 3 minutes, stirring.  Remove from the heat and cool.With a fork, toss the onion mixture into the beef. Whisk together the egg, egg white and milk.  Stir in the breadcrumbs and toss into the meat mixture along with the parsley, salt, pepper and lemon zest. Gently press the mixture into a non-stick loaf pan. Invert onto a shallow baking pan.  (foil lined for easy cleanup)Stir together the glaze ingredients and pour over the top.Bake in a 350 º F. oven for 1 hour to 1 hour and 15 minutes or until done through.Allow to sit for a few minutes before slicing.Serves 8.
