Pecan Pie


28 caramels1/2 cup water4 tablespoons butter2 eggs, lightly beaten3/4 cup sugar1/2 teaspoon salt1 teaspoon vanilla1 cup pecans9” unbaked pastry shell

In a double boiler over simmering water heat together the caramels, water and butter until the caramels are melted.  Whisk until the mixture is smooth.Whisk in the eggs, sugar, salt and vanilla.Stir in the pecans.Pour into pie shell.Bake in a 350 º F. oven  (in bottom one-third of oven) for about 1 hour or until set and puffed on top.Cool.
