- 1 pound peeled and sliced zucchini
- 1/4 cup lemon juice
- 1/2 teaspoon nutmeg
- 2 teaspoons cinnamon
- 1/3 cup sugar
In a small saucepan cook together the zucchini and lemon juice for 15 minutes, stirring often. Stir in the spices and sugar.Pour into a buttered 8”x8” baking pan.Top with the following topping and bake in a preheated 350 º F. oven fjor 40 to 50 minutes.
- 2/3 cup brown sugar
- 1/2 cup flour
- 1/2 cup oatmeal (old fashioned or quick)
- 1/3 cup softened butter
- Blend together to make a crumb topping.
