Strawberry Nut Bread

  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 1/2 teaspoons cinnamon
  • 2 eggs
  • 1 cup chopped strawberries
  • 1/2 teaspoon baking soda
  • 3/4 cup sugar
  • 3/4 cup chopped pecans, toasted


In a bowl, whisk together the flour, cinnamon, soda and salt.Whisk together the oil, sugar and eggs.Make a well in the dry  ingredients and fold in the egg mixture.  Halfway through the mixing, fold in the strawberries and nuts.  Fold just until blended; do not overmix.Put into a 9X5” greased and floured loaf pan.  Bake in the center of a preheated 325 º F. oven for 1 hour.  Cool in the pan for 10 minutes, then turn out onto a rack to cool completely.
