Stuffed Peppers and Stuffed Potatoes


  • 2 to 3 large green bell peppers

 

  • 2 to 3 baking potatoes

 

  • Wash and remove top of peppers, scoop out seeds.  Scoop out the potatoes, leaving a thick shell.

 

  • 2/3 pound ground beef’

 

  • 1/3 pound ground pork

 

  • Salt and pepper

 

  • 3/4 cup cooked rice

 

  • Parsley

 

  • 1 medium onion, chopped

 

  • 1 egg, beaten

 

Blend the stuffing ingredients and stuff loosely into the peppers and potatoes.  Place in a large pot with a lid.

 

Add about 1 inch of water and 1/4 cup tomato paste along with 1 fresh hot pepper.

 

Bring to a boil.

 

Simmer, covered, for 1 hour and 10 mintues.
