Lemon Cheese Bars


  • 1 yellow or lemon cake mix (with pudding in the mix)
  • 1/3 cup oil
  • 1 egg
  • Mix together to make crumbs.  Reserve 1 cup of the crumbs and press the remainder in the bottom of a 13X9X2” baking pan.
  • Bake in a 350 f. oven for 15 minutes.
  • Meanwhile beat until smooth:
  • 8 ounces softened cream cheese
  • 1 teaspoon fresh lemon juice
  • 1 egg
  • 1/3 cup sugar

 

Remove baked crust from the oven and spread over the cheese mixture.  Sprinkle top with the reserved 1 cup of crumbs.Return to 350 oven and bake 15 minutes more.
