¾ cup extra-virgin olive oil
¼ cup vinegar (red wine or balsamic)
1 teaspoon Dijon mustard 1 teaspoon salt
½ teaspoon freshly ground black pepper
Whisk together all ingredients to blend well.
Makes about 1 cup.
Tangy French Dressing
¼ cup cider vinegar
3 tablespoons dark brown sugar
1 teaspoon salt
¼ teaspoon cayenne pepper
2 teaspoons horseradish mustard
½ cup coarsely chopped scallions
¼ cup coarsely chopped flat-leaf parsley
½ cup chili sauce ¾ cup vegetable oil
In a blender or food processor, blend together all ingredients, except the oil, until smooth.
With the motor running, gradually pour in the oil and blend until the mixture is well blended.
Makes about 1 ½ cups
