1 zucchini, thickly sliced
1 yellow summer squash, thickly sliced
Salt and pepper
Juice of 1 lemon
Romano or Parmesan cheese
Ground cayenne (optional but good)
Preheat oven to 425. Toss squash with olive oil and season to taste.
Place in single layer on baking pan and roast until tender, about 25 minutes. Drizzle with lemon juice, sprinkle with cheese and just a little bit of ground cayenne.
