I love pasta! And an easy recipe for it. What’s not to love: pasta, scallions, garlic, tomatoes, cheeses and basil! This recipe is similar to one I enjoyed in Rome last year.
PASTA ALA ROMA
8 oz pasta, cooked
Pulse in food processor until tomatoes are just coarsely chopped:
4 scallions, chopped
12 oz cherry tomatoes, halved
3 tablespoons Parmesan
1 good tablespoon minced garlic
Handful fresh basil leaves
1/4 cup olive oil or bit more
For mixing in with cooked pasta:
4 oz. Mozzarella
Salt and pepper
Toss pasta with tomato mixture. Mix in Mozzarella and seasonings. Sprinkle with Parmesan and serve.
