ROASTED OLIVE MEDLEY
Ingredients
1/4 cup olive oil
Several sprigs fresh thyme
Couple sprigs fresh rosemary
Sprinkle or 2 of ground fennel or better yet about 3/4 teaspoon fennel seeds, crushed a bit
Red pepper flakes to taste
1 pound assorted olives
1/2 lemon, cut in half and then into rounds or just whole rounds
2 cloves garlic, peeled and smashed a tiny bit
Instructions
Preheat oven to 375. Mix everything but olives, lemons and garlic together. Pour mixture over olives, than stir in lemons. Roast, stirring halfway through, until mixture is fragrant and olives start to wrinkle, 20 minutes or so. During last 5 minutes, stir in garlic. Serve warm or at room temperature.
