Rita's Recipe of the Week - Orange Blueberry Bread

Betty Howell, lives down the road and is an excellent baker. Here’s a lovely bread for the holidays that is one of her specialties. This makes a nice hostess gift if you’re invited to share a meal.

Orange Blueberry Bread


3 cups flour

¾ cup sugar

1 Tablespoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

3 eggs

½ cup butter or margarine melted

2/3 cup orange juice

½ cup milk

1 tablespoon grated orange rind

1 cup blueberries

½ cup chopped nuts (optional)


1.Sift dry ingredients together,

2.Beat eggs; add butter (or margarine), orange juice, milk and orange rind and mix well.

3.Pour liquid mixture into dry ingredients and stir only until well moistened.

4.Pour into 5 x 9 inch buttered and floured loaf pan.

5.Bake in preheated 350 degree oven 60 – 70 minutes or until bread “tests” done with toothpick.

6.Let sit 10 minutes before removing from pan. Cool on wire rack.

7.Wrap and refrigerate before slicing.
