Pumpkin Pie - Rita Style!

MAPLE BOURBON PUMPKIN PIE

Ingredients

2/3 cup sugar

2-3/4 teaspoons pumpkin pie spice

2 large, lightly beaten eggs room temperature

1 (15-ounce) can pumpkin purée, not pumpkin pie filling

1 cup evaporated milk

1/2 cup pure maple syrup

2 tablespoons bourbon

1 generous teaspoon vanilla

Unbaked deep-dish pie dough

Instructions

Heat oven to 425.

Stir together sugar, salt and pumpkin pie spices. Set aside.

Whisk the sugar spice mixture with the eggs and puree until blended well.

Whisk in milk, maple syrup, bourbon and vanilla.

Pour into 9-inch deep-dish pie dish lined with pie dough. Bake 15 minutes. Turn heat to 350 and bake until pie is fully cooked, about 40-45 minutes. The pie is done when a toothpick inserted in the center comes out clean. The side will also puff up and the center is jiggly but not sloshing.

Cool on wire rack for an hour.

Tips:

• Bake ahead! Cover the pie with aluminum foil or plastic wrap and keep in the refrigerator. It should last three to four days.

Just add a splash of bourbon to your favorite whipped cream recipe before whipping.
