AVOCADO AND TOMATO SANDWICH

2 ripe avocados, mashed

Lime juice to taste - start with half a lime

1/3 cup mayonnaise

Chopped fresh basil, about 2 tablespoons

1/2 teaspoon chipotle pepper powder

8 slices good quality wheat or favorite bread, toasted

4 fairly thick slices sharp cheddar

2 tomatoes, sliced

2 green onions, green part only, diced fine

Handful baby arugula

Stir lime juice into mashed avocado. Season with salt. Mix mayo, basil and chipotle powder. Spread on one side of each slice of bread. On four slices of bread, layer cheese, avocado mixture and tomatoes. Season with salt, Sprinkle on onions and arugula. Top with remaining slices of bread. Slice and enjoy!
