Yardboy and Joe, Corned Beef is a traditional St. Patrick’s Day meal. This is one of our favorites. Use your favorite beer.

EASY AND YUMMY CORNED BEEF BRISKET

3 pound beef brisket, trimmed

1 onion, thinly sliced

Salt and pepper to taste

 

SauceWhisk together:

12 oz beer

12 oz. bottle chili sauce

3/4-1  cup packed dark brown sugar

Preheat the oven to 325 degrees.

Season the brisket on all sides with salt and pepper, and place in a glass baking dish. Cover with a layer of sliced onions. Pour sauce over meat. Cover tightly with 2 layers of aluminum foil. (Don’t just use a pan with a lid - it won’t be as tender). Bake 3 hours. Remove foil, bake another 20-30 minutes. Slice and enjoy!

Cover the dish tightly with aluminum foil.

Bake for 3 hours in the preheated oven. Remove the aluminum foil, and bake for an additional 30 minutes. Let the brisket rest and cool slightly before slicing and returning to the dish. Reheat in the oven with the sauce spooned over the sliced meat.
