Lavender is a ‘double-duty herb’; at home in both the kitchen and bedroom. Tuck a few sprigs of lavender into a muslin bag and place under your pillow for a calming sleep, or make my ‘Herbes de Provence’ for yourself and for gifts. Lavender is easily grown in the ground or in containers, provided good drainage and loads of sun. Harvest the flowers just as they start to open; harvest the leaves anytime.
‘Herbes de Provence’
Use dried herbs. Try it as a meat rub, seasoning for potatoes, breads and grains.
Mix together:
4 tablespoons thyme
2 tablespoons marjoram or 1 tablespoon oregano
1 tablespoon minced rosemary
1 tablespoon savory
2 teaspoons lavender flowers
1 teaspoon fennel seeds
1 bay leaf, crumbled
Store in airtight container away from heat and light.
