Roasted Pork Tenderloin - Just For Mom!
1-1/2 pounds pork tenderloin trimmed of fat
1 teaspoon salt
1 generous teaspoon minced garlic
2 teaspoons fresh rosemary minced
2 teaspoons olive oil
Pepper
Preheat oven to 450. Make a paste of the salt, garlic, rosemary and olive oil. Smear this all over the roast. Sprinkle with pepper. Roast until internal temperature reaches 140-150, about 20 minutes or so. Remove from oven, tent with foil 10 minutes. Slice and serve.
