FRESH CORN CASSEROLE
8 ears corn, 4 cups or so
1 cup whipping cream
1/2 stick butter, melted
Salt and pepper to taste
Preheat oven to 350.
In a large, deep bowl, slice off the kernels of corn. Or do it my way: I put the corn in the middle of my angel food pan - right in the hole. That holds it up so you can cut the kernels off without them flying all over. After you do that, with the dull side of the knife press and scrape the cob all the way down to remove all the bits of kernel and creamy milk inside.
Mix everything together and put in sprayed baking dish.
Bake at 350Fº for 30 to 45 minutes or until thoroughly warmed through.
