If you need a way to use those garden green beans and cherry tomatoes, here’s a salad that’s so good, especially with grilled chicken.
GREEN BEAN AND CHERRY/GRAPE TOMATO SALAD
About 1 pound fresh green beans, cut into 2” pieces, blanched in salted water and cooled
1/3 cup extra virgin olive oil
2-3 tablespoons Balsamic vinegar
2 garlic cloves, minced
1/2 to 1 teaspoon dried oregano
1 tablespoon mayonnaise
Handful fresh parsley, chopped
1 generous cup halved cherry or grape tomatoes or more to taste
Whisk olive oil, vinegar, garlic, oregano and may together. Stir in beans. Season with salt and pepper, then fold in tomatoes and parsley.
