Oktoberfest German Potato Salad

Stovetop Oktoberfest German Potato Salad

This is easy and so good. Sometimes I'll sprinkle it with a bit of parsley.

Fry 8 slices bacon until crisp. 

Drain and reserve 4 tablespoons drippings. 

Crumble bacon. Set aside. 

Sauté 1 small chopped onion in drippings until tender. 

Blend in 2 tablespoons flour, then stir in 2/3 cup cider vinegar and 1 to 1-1/4 cups water. (The less water, the stronger the flavor).  

Boil until thickened slightly and add 1/4 cup sugar or more to taste, salt and pepper to taste. 

Now taste and see if you want to add more vinegar, water, sugar, whatever. 

Pour over 5-6 cups sliced cooked potatoes, stir in bacon, and keep warm until served.
