ONE POT PASTA WITH SPICY CHUNKY TOMATO SAUCE Ingredients
1 cup onion, chopped fine
4-6 cloves garlic, minced, about 2 tablespoons
1 can, 14.5 oz., petite diced tomatoes
1-3/4 cup chicken broth, low sodium
1/2 teaspoon dried oregano
8 oz. whole wheat pasta or regular
Salt and a dash or 2 of cayenne pepper flakes to taste (opt)
10 oz. bag fresh spinach
Shredded Romano or Parmesan cheese
Heat a large saucepan over medium heat. Film pan with oil, and add onion and garlic. Cook just until onion is golden and garlic has a nice aroma. Add tomatoes, broth, oregano and pasta. Bring to a boil.
Stir to keep pasta under the liquid.
Cover, reduce to medium low and cook until pasta is done. Then, uncover, stir in seasonings to taste and start adding spinach. Serve with cheese.
