Gotta love a good, fresh salad

I’m into salads as you can tell, and this kale salad is so good and perfect for a springtime side dish. I like Russian kale since it’s always more tender than other varieties.


Ingredients Salad

Combine and set aside:

4 cups very finely chopped kale

Palmful chopped toasted almonds

1 apple, diced

Sharp cheddar cheese, diced, about 1/2 cup

Ingredients Dressing

Whisk together

2 tablespoons fresh lemon juice

Salt to taste

1 very small garlic clove, puréed

5 tablespoons extra virgin olive oil


Freshly grated Parmesan


Toss salad with dressing. Give it a shower of Parmesan.


Best made 15  minutes or so before you serve it. This lets the kale soften.
