Happy Cinco De Mayo from Seno-Rita

Along with Derby Day, the first Saturday in May also is Cinco De Mayo Day. Here’s a fun appetizer for your Cinco de Mayo party!



8 oz. dried chorizo, diced small

Handful chopped cilantro or to taste plus extra for garnish

1 jalapeno, seeded and diced

2 scallions/green onions, chopped, white and green part both

1 pound Mexican blend or Monterrey Jack cheese (or if you really like it hot Pepper Jack cheese), shredded


Saute chorizo, then stir in everything else. Run under broiler until bubbly, then give it a good shower of more cilantro. Serve with lime wedges and tortilla chips.

Cook chorizo, diced small, in a skillet until browned. Stir in a handful of chopped cilantro, 1 jalapeno, seeded and minced, a couple chopped scallions and 1 pound grated Monterrey Jack cheese.

Broil until melted and bubbly. Sprinkle with more cilantro. Serve with chips and lime wedges.
