Here’s a new “smashed” potato recipe that makes good use of garlic, lemon, dill and chives. An herbal experience!
SMASHED POTATOES WITH HERBS
1-1/2 pounds Yukon Gold potatoes, peeled and chunked up
1 large clove garlic
4-6 tablespoons olive oil
2 green onions, sliced
Up to a handful chopped dill
A palmful or so of sliced chives
Zest of 1 nice size lemon
Salt and pepper to taste
Boil potatoes and garlic until potatoes are tender. Drain, mash coarsely and stir in rest of ingredients.
