Rita's Chicken Salad

I had some leftover deli chicken and made this yummy, easy chicken salad. So easy and so good!

To make it fancy enough for guests, pile the salad on lettuce leaves, add garnishes of parsley and/or sliced tomatoes.


4 cups cubed, cooked chicken

1 cup mayonnaise

1 teaspoon paprika

Seasoning salt and pepper to taste

1-1/2 cups dried cranberries or cherries

1 heaping cup chopped celery

2 green onions, sliced thin

1 heaping cup chopped pecans, toasted if you like


Whisk mayonnaise, paprika and seasoned salt and pepper. Stir in cranberries, celery, onions and nuts, then stir in chicken. Blend well and enjoy.
