Breakfast from Rita

I have been having avocado toasts for breakfast and they are not only yummy but so good for you.Yes, avocados contain nearly 20 vitamins and minerals including potassium which is good for muscles and hearts. Just don’t overdo and you’ll be good to go.

By the way, here’s how to tell if it’s ripe:

Peel back the small stem or cap at the top. It should come away easily with green underneath - that’s the sign it’s at perfect ripeness. If you find brown underneath, it’s overripe and if the stem doesn’t come off, it’s not ripe.

No real recipe, but just smash a ripe avocado to your liking, add a sprinkle of salt and freshly ground pepper, along with fresh lemon or lime juice.

Spread on a toasted whole grain bread, and drizzle with olive oil and maybe a few scallions, or your favorite minced veggie.
