TOMATO MOZZARELLA PIE
4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onion
1 (9-inch) prebaked deep dish pie shell
1 cup each: shredded cheddar, mozzarella and mayonnaise
Preheat oven to 350. Put tomatoes in colander and sprinkle with a bit of salt. Let drain 10 minutes.
Layer tomatoes, basil and onion in pie shell. Sprinkle with salt and pepper.
Mix cheeses and mayonnaise together. Spread on top of tomatoes. Bake 30 minutes or until lightly browned.
