Lent is a good time to try new seafood recipes. The bonus? Most often you can find fresh fish on sale. Here’s a recipe that’s a favorite at our house.
TILAPIA WITH LEMON BUTTER DRIZZLE
4 tilapia filets
1/3 cup butter, melted
3 nice cloves garlic, minced
Zest and juice of 1 large lemon
Salt and pepper
Fresh parsley and or chopped tomatoes or garnish
Preheat oven to 425. Whisk together butter, garlic, lemon zest and juice.
Place filets in pan and season with salt and pepper.
Drizzle with butter sauce.
Bake 10-15 minutes, until fish flakes with fork.
