ZUCCHINI WITH PARMESAN AND HERBS
4 medium zucchini, sliced thick
1 teaspoon Italian seasoning
3/4 cup Parmesan cheese, divided
Dash cayenne pepper (opt)
Toss zucchini with enough olive oil to coat, then toss the zucchini with Italian seasoning and half the Parmesan. Place in single layer on baking sheet and sprinkle with rest of Parmesan. Broil about 4-5 minutes until cheese melts and zucchini is crisp tender. Give them a dash of cayenne.
You can also grill the zucchini on a covered grill.
