Rita's Apple Cake

here’s a cake using seasonal apples and pantry ingredients. It’s not a fancy cake, and doesn’t bake up real high. But it sure is delicious - sort of like an apple pie in cake form!

FRESH APPLE CAKE

Ingredients

1 cup flour, more as needed

1/4 teaspoon each: salt and baking soda

1/2 stick butter, room temperature

1 cup sugar

2 teaspoons vanilla

2 teaspoons cinnamon

1 large egg

2 cups finely diced apples

1/2 cup toasted pecans, chopped (optional)

Instructions

Preheat oven to 350.

In a large bowl, whisk together flour, baking soda, and salt.

Cream butter, sugar, vanilla and cinnamon. Add the egg and mix until smooth.

Beat in dry ingredients until smooth. Mixture will be thick.

Fold in the apples and nuts.

Spread batter evenly into a greased and floured 9-inch fluted tart pan or a regular 9” cake pan. Bake until cake is golden brown and a toothpick inserted in the center of the cake comes out clean, 35 to 45 minutes.
