Rita Says - Have a filet for Valentine's Day

Filet mignon is not something we eat on a regular basis. It’s for a special occasion, like Valentine’s Day. Wrapping the meat in bacon adds another layer of flavor. Serve with a baked potato, a vegetable and a side salad and you’ve got a lovely, memorable meal.

EASY AND ELEGANT FILET MIGNON

Ingredients

2 choice filet mignon steaks, 6-8 oz.

Olive oil

Salt and pepper

2 tablespoons minced shallot or red onion

2 slices bacon

Instructions

Place oven rack in highest position. Set oven to broil.

Rub steaks with olive oil all over, then season liberally with salt and pepper.

Wrap a slice of bacon around each steak and secure with 2 toothpicks.

Put steaks on broiler pan and broil 5-6 minutes. Turn over and sprinkle tops with shallots or onion. Broil 5-7 minutes more, or until done to your liking.

TIPS

•Let steaks sit out at room temperature 15 minutes before broiling.

•Pat steaks dry before seasoning.
