QUICK SLOPPY JOES
Make a double batch and freeze half. We like this served on burger buns topped with slaw. A pickle and carrot sticks are good sides.
Ingredients
•1 pound lean ground beef
•1/4 cup finely diced onion or to taste
•1/4 cup finely diced bell pepper or to taste
•12 oz. bottle chili sauce
•Brown sugar to taste: start with 3 tablespoons and go from there
•Salt and pepper to taste
Instructions
1.In a large skillet over medium heat, cook beef, onion and bell pepper, crumbling beef with a spoon or potato masher as you go.
2.After beef has cooked, add chili sauce and brown sugar. Bring to a boil, then lower to a simmer. Cook 10-15 minutes. Season to taste. Serves 4-6.
Tips:
•Light or dark brown sugar works well.
•By cooking in a large skillet, beef mixture cooks down quicker, making for saucy, yet not runny, Sloppy Joes.
