Rita's Recipe of the Week . . . . Yum!



1 cup graham cracker crumbs, divided

1-1/3 cups all purpose flour

1/4 teaspoon baking soda

1/2 cup butter, room temperature

1/4 cup packed brown sugar

1/2 cup sugar

1 large egg, room temperature

1-1/2 teaspoons vanilla

1-1/2 cups milk chocolate chips, divided

3 cups mini marshmallows


Preheat oven to 350. Spray a pizza pan with nonstick spray.

Whisk together ¾ cup graham cracker crumbs, flour, and baking soda.

Beat butter and sugars together. Mix in graham cracker mixture until combined well.

Press dough into bottom of pan. Prick dough all over with fork.

Bake 8 minutes or so until crust starts to brown and is baked through.

Remove from oven and immediately sprinkle with 1-1/4 cup chips, leaving rim around outside to look like pizza crust. After a few minutes chips will melt so you can spread them out smooth.

Sprinkle with rest of cracker crumbs, marshmallows and rest of chips.

Place under broiler just until marshmallows start to brown. Careful so they don’t burn. Cut into wedges to serve.
