NO BAKE BITTERSWEET CHOCOLATEPIE
1 store bought or homemade chocolate cookie crust
4 oz unsweetened chocolate, plus more for topping
14 oz can sweetened condensed milk - regular, not low fat
2 cups heavy whipping cream
1/4 cup powdered sugar
1-1/2 teaspoons vanilla
Chop chocolate and place in microwave-safe bowl. Heat on 50% power in the microwave in 30-second increments, stirring between each, until melted and smooth.
Stir condensed milk into chocolate. Set aside to cool, about 10 minutes.
Whip cream with powdered sugar and vanilla until sturdy peaks form.
Carefully fold half of the whipped cream into the chocolate mixture. Be careful - you don’t want to stir or whipped cream will “break” and separate.
Spoon into pie crust Spread with rest of whipped cream. Sprinkle on more grated chocolate on top if you want.
Chill at least several hours to set up in the refrigerator before serving.
