Rita is 'squashing' it this week


First, poke holes in several places with a fork.

Place in microwave and cook on high a few minutes or so. What you’re doing is just softening the outside, hard shell to allow you to cut it more easily.

Carefully, with mitts, take out the squash, let it cool, then cut in half longways.

Scoop out the seeds and then drizzle some olive oil and salt and pepper on the inside.

Preheat oven to 400 and line a rimmed cookie sheet with parchment paper or foil sprayed with cooking spray.

Place cut side down on the cookie sheet.

Bake 40-60 minutes, until cut sides look golden and you can easily pierce through the inside of the squash with a fork. Check after 40 minutes.

Let squash cool just a bit and fluff insides with a fork. You’ll start seeing spaghetti like strands.

Serve as you would pasta.

Even just olive oil and garlic is yummy, dressed with a little Parmesan cheese!
