here’s a so good appetizer to serve when guests pop in during the holidays. Make it ahead and rewarm. What’s not to love about the colors and flavors of Christmas with sausage, cheese and tomatoes?
HOLIDAY SAUSAGE & QUESO
Ingredients
1 pound plain pork sausage (can sub turkey sausage)
8 oz. cream cheese, cut up
2 cans Rotel tomatoes and green chilies
2 cups shredded Mexican, cheddar cheese, Italian blend or your favorite plus extra for garnish
1 box frozen corn, thawed and microwaved a bit
Chopped green onions, extra cheese and diced tomatoes for garnish (optional but good)
Instructions
Easy peasy. Just cook sausage and break it up as you go. Drain grease.
Add everything but garnishes and cook until bubbly and cheese melts.
Garnish and serve with tortilla chips. Blue chips are festive.
