From about a 5 gallon bucket of sap, I got not even 1 scant cup of syrup! But it was so fun and a great learning experience for the grandkids.
BALSAMIC MAPLE SALAD DRESSING
This makes a big batch. Ingredients can be halved.
Ingredients
1/2 cup maple syrup
1 cup good balsamic vinegar
2 cups olive oil
1 generous tablespoon Dijon
Salt and pepper
Instructions
Put everything in blender and blend until combined.
RICH MAPLE BROWN SUGAR MUFFINS
Ingredients muffins
2 cups flour
1/2 cup packed light brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1/2 cup butter, melted
1/2 cup maple syrup
1/4 cup sour cream
1 large egg
1 teaspoon vanilla
Ingredients topping
3 tablespoons each flour and sugar
3/4 teaspoon cinnamon
2 tablespoons butter
Instructions
Preheat oven to 375.
Combine flour, brown sugar, baking powder and salt.
In another bowl, combine milk, butter, syrup, sour cream, egg and vanilla.
Stir into dry ingredients just until moistened.
Fill sprayed or paper-lined muffin cups two-thirds full.
For topping, combine flour, sugar, nuts and cinnamon; cut in butter until crumbly.
Sprinkle over batter.
Bake 18-20 minutes or until a toothpick inserted in center comes out clean.
