4 cups cooked chicken, diced
2 ribs tender lovage thinly sliced on the diagonal
2 cups red grapes, cut in halves
1 cup coarsely chopped walnuts, toasted if desired
1/2 cup golden raisins or currants
1 cup mayonnaise
1/4 cup half & half
1/2 cup apricot preserves
1/4 cup rice vinegar
1-1/2 to 2 tablespoons curry powder
Salt and pepper to taste
Just mix everything together.
Whisk everything together. Gently fold the dressing into the salad and refrigerate at least 1 hour before serving for flavors to meld together.
