Memorial Day is an American holiday, observed on the last Monday of May, honoring the men and women who died while serving in the U.S. military. Many Americans observe Memorial Day by visiting cemeteries or memorials, holding family gatherings and participating in parades. Unofficially, it marks the beginning of the summer season.
Originally known as Decoration Day!
When we were kids my dad & mom would pile all of us in his Chevrolet to go on a day long trip to Dayton, Ohio to visit relatives and to decorate the graves of our family. There were no super highways back then!
Mom would pack her version of a picnic lunch: stuffed cabbage rolls cooked and toted in an iron kettle; fried kibbi patties, tabouleh, plain white bread and seasonal fruit.
Black Bean and Corn Salad
Ingredients
· 2 cans black beans drained and rinsed
· 1 1/2 cups corn kernels fresh, frozen or canned
· 1/4 cup red onion minced
· 1 red bell pepper diced (I left this out because i don’t like them)
· 1 avocado peeled, pit removed and diced
· 1/3 cup cilantro leaves chopped
· 1/3 cup olive oil
· 1/4 cup lime juice
· 2 teaspoons honey
· 1 teaspoon chili powder
· 1 teaspoon cumin
· salt and pepper to taste
I added Cotijo cheese mixed in and added a little on top
Instructions
1. Place the black beans, corn, red onion, red bell pepper, avocado and jalapeno in a large bowl.
2. In a small bowl, whisk together the cilantro, olive oil, lime juice, honey, chili powder, cumin and salt and pepper.
3. Pour the dressing over the beans and vegetables and toss gently to coat. Serve.
